A few things we know from the oven, and why our pastries taste the way they do.

Cold butter makes flaky pastry
Small pieces of cold butter melt in the heat of the oven and turn to steam. The steam lifts the dough into thin, crisp layers, which is why we keep our pastry dough chilled until the last minute.

A croissant is a folding project
Classic croissant dough is folded three times around a slab of butter, creating around 27 alternating layers before it ever meets the oven. It takes time, and you can taste it.

Chin chin is all in the rolling
Chin chin is a fried, crunchy dough snack loved across Nigeria. The thickness of the cut decides everything: thin for a light snap, thicker for a satisfying bite.

Puff-puff needs patience
The batter is yeast-raised, so it needs a warm, unhurried rest before frying. Rushed batter turns out dense. Rested batter fries up golden, light and airy.

Cool the cake before you frost it
Frosting on a warm sponge slides straight off. We let every layer cool completely, so the buttercream stays smooth and the edges stay sharp.
